Vinification Details
After the grapes were harvested, they were crushed, destemmed and then macerated. Total fermentation takes 7 days and total maceration 10 days. The wine is then clarified by centrifugation. Afterwards, the wine is conserved with micro-oxygenation and fine lees to avoid evolution. It is matured in oak for 6 months. Finally it is tartaric stabilized, filtered and bottled.
